Gradually whisk in the beef broth, ensuring there are no lumps. Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cook for 5 minutes, stirring occasionally, until slightly thickened.
Stir in the heavy cream and season with additional salt and pepper to taste. Simmer for another 2–3 minutes, then remove from heat.
Once the meatloaf is cooked, let it rest in the pan for 10 minutes before removing and slicing. Serve the meatloaf with the creamy gravy drizzled over the top, and garnish with fresh parsley if desired.
