Ingredients

  • 3 cups All-purpose flour
  • 1 cup Unsalted butter
  • 1 teaspoon Salt
  • 1 cup Sour cream
  • 1 pound Ground beef
  • 1 medium Yellow onion (finely chopped)
  • 2 cloves Garlic cloves (minced)
  • 1 medium Carrot (grated)
  • 1 small Potato (peeled and grated)
  • 0.5 teaspoon Ground allspice
  • 0.25 teaspoon Ground white pepper
  • 0.5 teaspoon Salt (for filling)
  • 2 large Eggs (beaten, for sealing and brushing)
  • 2 tablespoons Vegetable oil

Directions

Step 1

In a large bowl, combine the all-purpose flour and salt for the pastry.

Step 2

Cut the unsalted butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to rub the butter into the flour until it forms a crumb-like texture.

Step 3

Stir in the sour cream and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Step 4

While the dough chills, prepare the filling. Heat the vegetable oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

Step 5

Add the minced garlic and cook for an additional minute until fragrant.

Step 6

Stir in the ground beef and cook until browned, breaking it up as it cooks.

Step 7

Add the grated carrot, grated potato, ground allspice, ground white pepper, and salt to the skillet. Mix everything thoroughly and cook for another 5-7 minutes until the vegetables soften and the mixture is well combined. Remove from heat and let the filling cool to room temperature.

Step 8

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 9

On a floured surface, roll out the chilled dough to about 1/8 inch thick. Use a round cutter (approximately 5-6 inches in diameter) to cut out circles.

Step 10

Place a spoonful of the cooled meat filling onto one-half of each dough circle. Be careful not to overfill.

Step 11

Brush the edges of the dough with the beaten egg, then fold the circle over to create a half-moon shape. Press the edges together to seal and crimp with a fork.

Step 12

Arrange the meat pies on the prepared baking sheet. Brush the tops with the beaten egg to give the pastries a golden finish.

Step 13

Bake in the preheated oven for 25-30 minutes, or until the pies are golden brown and cooked through.

Step 14

Allow the pies to cool slightly before serving. Enjoy warm or at room temperature!
