Ingredients

  • 500 grams Potatoes
  • 60 grams All-purpose flour
  • 1 large Egg
  • 60 milliliters Milk
  • 1 teaspoon Salt
  • 0.25 teaspoons Ground white pepper
  • 30 grams Butter
  • 2 tablespoons Oil
  • 2 tablespoons Chopped fresh chives (optional, for garnish)
  • 120 grams Lingonberry jam (optional, for serving)
  • 120 grams Sour cream (optional, for serving)

Directions

Step 1

Peel the potatoes and cut them into evenly-sized chunks. Boil in salted water until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

Step 2

Mash the potatoes until smooth, allowing them to release any excess steam. Let them cool slightly.

Step 3

In a mixing bowl, combine the mashed potatoes with flour, the egg, milk, salt, and ground white pepper. Stir until a smooth and slightly sticky batter forms.

Step 4

Preheat a large skillet over medium heat and add half the butter along with 1 tablespoon of oil.

Step 5

Use a large spoon to scoop small portions of the potato mixture (around 2-3 tablespoons each) and gently place them into the skillet. Flatten slightly with the back of the spoon into pancake shapes.

Step 6

Cook the pancakes for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to prevent them from burning.

Step 7

Remove the pancakes from the skillet and keep warm. Repeat the process with the remaining butter, oil, and batter, cooking in batches.

Step 8

Serve the Swedish mashed potato pancakes hot, garnished with chopped chives if desired. Lingonberry jam and sour cream make excellent traditional accompaniments.
