  • 4 pounds Leg of lamb (bone-in)
  • 2 teaspoons Salt

  • 6 cloves Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 1 cup Dry white wine
  • 1.5 cups Beef or lamb broth
  • 4 medium Carrots, peeled and chopped
  • 1 large Yellow onion, sliced
  • 4 medium Potatoes, peeled and quartered

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Trim any excess fat from the leg of lamb and pat it dry with paper towels.

Step 3

In a small bowl, mix together the salt, black pepper, crushed juniper berries, ground allspice, chopped rosemary, chopped thyme, and minced garlic.

Rub the spice-herb mixture thoroughly over the entire surface of the lamb, pressing it into the meat for maximum flavor.

Heat the olive oil in a large oven-safe roasting pan or Dutch oven over medium-high heat.
