Ingredients

  • 2 cups Granulated sugar
  • 1 cup Light corn syrup
  • 0.5 cup Water
  • 1 teaspoon Flavoring extract (e.g., peppermint, raspberry, or lemon)
  • 2 drops Food coloring (optional)
  • 0.25 cup Powdered sugar (for dusting)

Directions

Step 1

Prepare a baking sheet by lining it with parchment paper and lightly dusting it with powdered sugar. Set aside.

Step 2

In a medium, heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and water.

Step 3

Place the saucepan over medium heat and stir the mixture gently until the sugar dissolves completely.

Step 4

Once the sugar has dissolved, stop stirring and increase the heat to medium-high. Attach a candy thermometer to the side of the saucepan, ensuring it doesn’t touch the bottom.

Step 5

Boil the sugar mixture until it reaches 300°F (150°C), known as the hard crack stage. This step should take about 20–25 minutes. Carefully monitor the temperature to avoid overcooking.

Step 6

Remove the saucepan from the heat immediately and let it sit for about 30 seconds until the bubbling subsides.

Step 7

Quickly stir in your desired flavoring extract and food coloring, if using.

Step 8

Pour the hot candy mixture onto the prepared baking sheet. Allow it to spread naturally or use a heatproof spatula to help it spread to your preferred thickness.

Step 9

Let the candy cool completely, about 10–15 minutes, until it’s hardened.

Step 10

Once the candy is hardened, use a mallet or the back of a heavy spoon to break it into bite-sized pieces.

Step 11

Dust the candy pieces lightly with powdered sugar to prevent sticking.

Step 12

Store the hard candy in an airtight container at room temperature for up to 2 weeks.
