  • 75 grams Chopped almonds
  • 1 tablespoon Butter

Directions

Step 1

Gather all the ingredients and prepare a small saucepan and a candy thermometer.

Line a mini muffin tin or small paper candy cups on a baking tray for later use.

In a medium-sized saucepan, combine the heavy cream, sugar, and corn syrup.

Place the saucepan over medium-low heat, stirring constantly to dissolve the sugar.

Allow the mixture to come to a gentle boil. Insert a candy thermometer into the mixture and continue cooking without stirring until the temperature reaches 122°C (252°F) for a firm and chewy texture. If you prefer a harder candy, cook to 125°C (257°F).
