Ingredients

  • 1 medium head green cabbage
  • 0.5 medium head red cabbage
  • 2 large carrot
  • 0.5 cup dried cranberries
  • 0.25 cup fresh parsley
  • 0.25 cup slivered almonds
  • 3 tablespoons apple cider vinegar
  • 4 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Remove the outer leaves of the green and red cabbages, then cut them in half and remove the core. Finely shred both cabbages using a sharp knife, mandoline, or food processor.

Step 2

Peel and grate the carrots using a box grater or food processor.

Step 3

In a large mixing bowl, combine the green cabbage, red cabbage, and grated carrots.

Step 4

Add the dried cranberries, chopped parsley, and slivered almonds to the cabbage mixture, and toss gently to combine.

Step 5

In a small bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, honey, salt, and black pepper to create the dressing.

Step 6

Pour the dressing over the cabbage mixture and toss thoroughly to coat all ingredients evenly.

Step 7

Let the salad sit for 10–15 minutes to allow the flavors to meld. Taste and adjust seasoning if needed.

Step 8

Transfer the salad to a serving dish and garnish with additional parsley, almonds, or cranberries if desired.

Step 9

Serve immediately or refrigerate for up to 24 hours for optimal freshness.
