Ingredients

  • 0.25 cup Grated Parmesan (optional, for garnish)
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Wash the potatoes thoroughly and pat them dry. Leave the skins on for texture and flavor.

Place one potato on a cutting board. Position two wooden chopsticks or the handles of wooden spoons on either side of the potato to act as guards. Use a sharp knife to carefully slice the potato into thin slices about 1/8 inch thick, stopping just before cutting all the way through. The chopsticks will help prevent the knife from slicing through completely.

Repeat the slicing process for each potato and transfer them to the prepared baking sheet.
