Ingredients

  • 1 large (about 1.2 kg) swede (rutabaga)
  • 2 medium (about 400 g) potato
  • 120 ml heavy cream
  • 60 g butter
  • 1 large egg
  • 60 g breadcrumbs
  • 30 g grated Parmesan cheese
  • 0.25 tsp ground nutmeg
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp olive oil

Directions

Step 1

Preheat your oven to 190°C (375°F). Grease a medium-sized casserole dish with a small amount of butter or olive oil.

Step 2

Peel the swede and potatoes, then dice them into medium-sized chunks for even cooking.

Step 3

Place the swede and potato chunks into a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for 20-25 minutes, or until the vegetables are fork-tender.

Drain the cooked vegetables and transfer them to a large mixing bowl. Mash them thoroughly using a potato masher or a hand mixer until smooth.
