Ingredients

  • 12 pieces large sea scallops
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 0.25 cup white wine
  • 2 tablespoons parsley, chopped
  • 0.25 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Pat the scallops dry with paper towels to remove any excess moisture. Season both sides of the scallops with salt and black pepper.

Step 2

Preheat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and 2 tablespoons of butter to the skillet, allowing the butter to melt and sizzle slightly.

Step 3

Carefully place the scallops in the skillet in a single layer, making sure not to crowd them. Sear the scallops for 2-3 minutes on one side without moving them, until a golden-brown crust forms.

Step 4

Flip the scallops and cook for an additional 2 minutes on the other side. Remove the scallops from the skillet and set aside on a plate. Reduce the heat to medium.

Step 5

Add the remaining olive oil and butter to the skillet. Stir in the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant but not browned.

Step 6

Deglaze the pan by adding the white wine, using a wooden spoon to scrape up any browned bits from the bottom of the skillet. Let the wine simmer for 1-2 minutes to reduce slightly.

Step 7

Stir in the lemon juice and lemon zest, then return the scallops to the skillet. Spoon the sauce over the scallops and allow them to warm through for 1-2 minutes.

Step 8

Sprinkle the chopped parsley over the scallops and give the dish a final stir. Taste the sauce and adjust seasoning if needed.

Step 9

Serve the Swashbuckler's Scallops immediately over rice, pasta, or alongside crusty bread to soak up the flavorful sauce.
