Ingredients

  • 4 pieces chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 3 cloves garlic, minced
  • 0.5 cups orange juice
  • 0.25 cups lemon juice
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 1 teaspoon orange zest
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat the olive oil in a large skillet or sauté pan over medium-high heat.

Add the chicken breasts to the skillet and sear for 2-3 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.

In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn it.
