  • 4 large bell peppers (any color)

  • 1 cup shredded Mexican cheese blend
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 4 pieces lime wedges (for serving)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut the bell peppers in half lengthwise, removing the seeds and membranes. Place them cut-side up in a baking dish and lightly brush them with half of the olive oil.

In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes with green chilies, cooked rice, half of the shredded cheese, chili powder, cumin, paprika, salt, and black pepper. Mix everything until well combined.
