  • 250 ml white vinegar

  • 2 bay leaves
  • 10 g fresh dill
  • 1 red onion, thinly sliced
  • 1 carrot, peeled and thinly sliced

Directions

Step 1

Rinse the fish fillets under cold water and pat them dry with paper towels. Cut the fish into bite-sized pieces, approximately 2-inch cubes.

Step 2

In a medium saucepan, bring the water to a boil. Add the fish and simmer gently for 3-4 minutes, or until the fish is cooked through and flakes easily with a fork. Using a slotted spoon, carefully transfer the fish to a plate and allow it to cool completely.

Step 3

In a separate saucepan, combine white vinegar, granulated sugar, sea salt, mustard seeds, peppercorns, and bay leaves. Heat the mixture over medium heat, stirring occasionally, until the sugar and salt are fully dissolved. Remove from heat and let the brine cool to room temperature.
