Ingredients

  • 400 grams elbow macaroni
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 500 milliliters milk
  • 200 grams sharp cheddar cheese, grated
  • 50 grams Parmesan cheese, grated
  • 100 grams mozzarella cheese, grated
  • 1 teaspoon mustard powder
  • 1 teaspoon paprika
  • 1 large egg
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or similar casserole dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a smooth roux and cook for 1-2 minutes while stirring constantly.

Step 4

Gradually pour in the milk, whisking continuously to avoid lumps. Cook for 5-7 minutes, stirring frequently, or until the sauce thickens.

Step 5

Lower the heat and stir in 150 grams of cheddar cheese, the Parmesan cheese, and 50 grams of mozzarella cheese. Continue stirring until the cheese has melted and the sauce is smooth.

Step 6

Stir in the mustard powder, paprika, salt, and black pepper. Adjust seasoning to taste.

Step 7

Remove the saucepan from heat and allow the cheese sauce to cool slightly. Beat the egg in a small bowl and then whisk it into the cheese sauce.

Step 8

In a large mixing bowl, combine the cooked macaroni and the cheese sauce. Mix well to evenly coat the pasta.

Step 9

Transfer the macaroni mixture into the prepared baking dish. Spread it out evenly and top with the remaining grated cheddar and mozzarella cheese.

Step 10

Sprinkle the breadcrumbs evenly over the top of the cheese for a crispy topping.

Step 11

Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the pie is bubbling around the edges.

Step 12

Allow the macaroni pie to cool for 5-10 minutes before serving. Enjoy your delicious Suzie's Macaroni Pie warm!
