Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 28 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 1 cup beef or chicken broth
  • 1.5 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.25 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup shredded cheddar cheese (optional, for garnish)
  • 0.25 cup sour cream (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook, breaking it up into crumbles, until browned and fully cooked. Drain off any excess fat and set the beef aside on a plate.

Step 2

In the same pot, add a bit more olive oil if necessary, and sauté the diced onion until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

Step 3

Stir in the diced green and red bell peppers and cook for another 4-5 minutes until they begin to soften.

Step 4

Return the cooked ground beef to the pot. Add the canned diced tomatoes, tomato paste, kidney beans, black beans, and beef or chicken broth. Stir to combine.

Step 5

Add the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Mix well to evenly distribute the spices.

Step 6

Bring the mixture to a simmer. Reduce the heat to low, cover, and let it simmer gently for 30-35 minutes, stirring occasionally to prevent sticking. If the chili thickens too much, add a splash of water or broth to adjust the consistency.

Step 7

Taste and adjust seasoning if needed, adding more salt, pepper, or spices to suit your preference.

Step 8

Serve hot, garnished with fresh cilantro, shredded cheddar cheese, and a dollop of sour cream, if desired. Enjoy with crusty bread, tortilla chips, or over rice for a complete meal!
