Ingredients

  • 500 grams Beef (sirloin or flank steak, cut into thin strips)
  • 100 grams Ground peanuts (roasted and finely blended)
  • 3 tablespoons Suya spice mix (yaji)
  • 1 teaspoon Salt
  • 1 teaspoon Cayenne pepper (adjust to taste)
  • 2 tablespoons Vegetable oil
  • 10 pieces Wooden skewers (soaked in water)
  • 1 medium Onions (optional, for garnishing)
  • 2 medium Tomatoes (optional, for garnishing)

Directions

Step 1

1. Soak the wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.

Step 2

2. In a bowl, combine the ground peanuts, suya spice mix, salt, and cayenne pepper to create the seasoning mix.

Step 3

3. Cut the beef into thin strips, about 1 inch wide and 5 inches long.

Step 4

4. Coat the beef strips with the seasoning mix, ensuring all sides are evenly coated. Reserve a small portion of the seasoning mix for sprinkling later.

Step 5

5. Thread the spiced beef strips onto the soaked skewers, weaving the meat along the stick to ensure it holds well during grilling.

Step 6

6. Brush the skewered meat with vegetable oil using a pastry brush to help lock in the flavors and keep the meat moist.

Step 7

7. Preheat a grill or grill pan over medium-high heat. Alternatively, you can use an oven set to 200°C (400°F) on the grill setting.

Step 8

8. Place the skewers on the grill and cook for 10–15 minutes, turning occasionally, until the meat is cooked through and has a slightly charred, smoky appearance.

Step 9

9. While the meat grills, prepare the garnishes by slicing the onions and tomatoes into thin rounds.

Step 10

10. Once the skewers are cooked, sprinkle the reserved seasoning mix over the meat for an extra flavor kick.

Step 11

11. Serve the suya meat hot on a platter with sliced onions and tomatoes on the side. You can also pair it with flatbread or enjoy it on its own.
