Ingredients

  • 1 medium head green cabbage
  • 0.5 medium head red cabbage
  • 3 medium carrots
  • 0.5 medium red onion
  • 0.5 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon celery seeds
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Remove the outer leaves from the green and red cabbages, and rinse thoroughly.

Step 2

Cut the cabbages in half and remove the cores. Thinly slice the cabbage into fine shreds, or use a mandoline slicer for uniformity. Place shredded cabbage in a large bowl.

Step 3

Peel and grate the carrots using a box grater or food processor. Add the grated carrots to the cabbage bowl.

Thinly slice the red onion into very fine slices and add to the mix.
