  • 4 cloves garlic (minced)
  • 3 medium carrots (sliced into rounds)
  • 3 stalks celery (chopped)
  • 3 medium potatoes (peeled and diced)
  • 6 cups chicken broth (low-sodium)
  • 1 14-ounce can diced tomatoes (canned, with juices)
  • 1 whole bay leaf
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley (chopped)
  • 2 cups fresh spinach (optional, for garnish)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Season the chicken breasts with salt and pepper. Sear the chicken in the hot oil for 2-3 minutes on each side until lightly browned. Remove from the pot and set aside.

In the same pot, add the diced onion and sauté for 3-4 minutes until translucent. Add the garlic and cook for another 30 seconds until fragrant.
