Ingredients

  • 1.5 cups sushi rice
  • 2 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
  • 1 sheet seaweed, toasted
  • 4 ounces smoked salmon
  • 4 ounces raw tuna, thinly sliced
  • 1 medium avocado, sliced
  • 0.5 medium cucumber, thinly sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon Sriracha
  • 1 tablespoon sesame seeds
  • 1 tablespoon soy sauce
  • 1 teaspoon wasabi
  • 1 stalk green onion, chopped
  • 2 tablespoons cooking oil

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear.

Step 2

In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat.

Step 3

Once boiling, lower the heat, cover, and simmer for 18-20 minutes until the water is absorbed and the rice is tender.

Step 4

In a small bowl, mix rice vinegar, sugar, and salt. Gently fold this mixture into the cooked rice. Set aside to cool.

Step 5

While the rice cools, prepare the toppings. Slice the smoked salmon, tuna, avocado, and cucumber.

Step 6

Cut the toasted seaweed sheet into small strips.

Step 7

Mix mayonnaise and Sriracha to create spicy mayo. Set aside.

Step 8

Once the rice has cooled, spread it into a 12-inch circle on a large sheet of plastic wrap or parchment paper.

Step 9

Heat oil in a non-stick frying pan over medium-high heat. Carefully transfer the rice base into the pan.

Step 10

Cook until the rice develops a crispy bottom, about 4-5 minutes. Use a spatula to carefully flip it over and cook for another 4 minutes.

Step 11

Transfer the crispy rice pizza base to a serving board.

Step 12

Arrange the smoked salmon, tuna, avocado slices, and cucumber on top of the rice base.

Step 13

Drizzle the spicy mayo and a little soy sauce over the toppings.

Step 14

Sprinkle sesame seeds, green onion, and dot with wasabi as per taste.

Step 15

Cut the sushi pizza into wedges and serve immediately.
