  • 2.5 cups Water
  • 1.5 tablespoons Rice vinegar

Directions

Step 1

Place the sushi rice in a large bowl and rinse it thoroughly under cold running water. Gently swish the rice with your hand to remove excess starch. Repeat this process 3–4 times until the water runs clear.

Drain the rinsed rice and transfer it to a rice cooker. Add 2.5 cups of water and let the rice soak for 30 minutes (optional, but recommended for better texture).

Step 3

Cook the rice in your rice cooker according to the manufacturer's instructions. If you don't have a rice cooker, you can cook the rice in a pot: boil the water, reduce heat to low, cover, and simmer for 18–20 minutes until the water is fully absorbed.

Step 4

While the rice cooks, prepare the sushi vinegar seasoning. In a small saucepan, combine the rice vinegar, granulated sugar, and salt. Heat over low heat, stirring constantly, until the sugar and salt dissolve completely. Do not boil. Remove from heat and let it cool to room temperature.

When the rice is done cooking, transfer it to a large, non-metallic bowl. Gently spread the rice out to help it cool slightly.
