Rinse the sushi rice under cold water until the water runs clear. Drain well.
In a medium saucepan, combine rinsed rice and 1.25 cups of water. Bring to a boil over high heat, then reduce to a simmer. Cover and cook for 15 minutes, or until the water is absorbed and the rice is tender.
Remove the saucepan from heat. Let the rice sit, covered, for 10 minutes.
In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
Transfer the cooked rice to a large bowl. Gently fold in the vinegar mixture with a spatula, cutting through rice without smashing it. Let the rice cool to room temperature.
Cut the fish into thin strips suitable for a hand roll.
Halve the cucumber lengthwise and remove seeds. Cut into thin, long strips.

Cut each nori sheet in half vertically. Place one half on a flat surface with a short end close to you.
With wet hands, spread a thin layer of sushi rice over the left half of the nori sheet, leaving a border along the edge.
Place a few strips of fish, cucumber, and avocado diagonally across the rice.
Add a small dab of wasabi if desired.
Roll the nori into a cone shape, sealing the edge with a few grains of rice.
Repeat with the remaining ingredients.
Serve the hand rolls with soy sauce and pickled ginger on the side.
