  • 1 cup Sushi rice
  • 1.25 cups Water
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sugar
  • 0.5 teaspoon Salt
  • 4 sheets Nori sheets
  • 200 grams Fresh salmon or tuna (sashimi-grade)
  • 1 small Cucumber
  • 1 medium Avocado
  • 2 teaspoons Wasabi
  • 4 tablespoons Soy sauce
  • 4 tablespoons Pickled ginger

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear. Drain well.

Step 2

In a medium saucepan, combine rinsed rice and 1.25 cups of water. Bring to a boil over high heat, then reduce to a simmer. Cover and cook for 15 minutes, or until the water is absorbed and the rice is tender.

Step 3

Remove the saucepan from heat. Let the rice sit, covered, for 10 minutes.

In a small bowl, mix rice vinegar, sugar, and salt until dissolved.

Transfer the cooked rice to a large bowl. Gently fold in the vinegar mixture with a spatula, cutting through rice without smashing it. Let the rice cool to room temperature.
