Ingredients

  • 1 cup sushi rice
  • 1.25 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 pieces nori sheets
  • 0.5 pound fresh salmon or tuna
  • 1 medium cucumber
  • 1 medium avocado
  • 1 small carrot
  • 2 tablespoons soy sauce
  • 1 teaspoon wasabi
  • 2 tablespoons pickled ginger
  • 1 piece sushi mat

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear.

Step 2

In a saucepan, combine rice and 1.25 cups of water. Bring to a boil, then reduce to a simmer, and cover. Cook for 20 minutes or until rice is tender.

Step 3

In a small bowl, mix rice vinegar, sugar, and salt. Microwave until sugar dissolves.

Step 4

Fold the vinegar mixture into the cooked rice while it's still warm, then let it cool to room temperature.

Step 5

Slice the fresh salmon or tuna into thin strips.

Step 6

Peel the cucumber, carrot, and avocado. Cut into thin strips.

Step 7

Lay a nori sheet on a sushi mat, shiny side down.

Step 8

Spread a layer of rice evenly over the nori, leaving about an inch at the top uncovered.

Step 9

Arrange strips of salmon or tuna, cucumber, carrot, and avocado horizontally across the rice.

Step 10

Add a small amount of wasabi, soy sauce, and pickled ginger over the fillings.

Step 11

Use the sushi mat to roll the nori over the fillings, pressing gently to form a tight burrito shape.

Step 12

Seal the roll by moistening the top uncovered edge of the nori.

Step 13

Repeat the process with the second nori sheet and remaining ingredients.

Step 14

Slice each sushi burrito in half and serve with additional soy sauce and wasabi if desired.
