Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 cup powdered sugar (optional, for rolling)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, beat the unsalted butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

Step 3

Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.

Step 6

If the dough is too sticky to handle, refrigerate it for 15-20 minutes until firm enough to roll.

Step 7

Lightly dust a clean surface with powdered sugar (optional) or flour. Roll out the dough to about 1/4-inch thickness.

Step 8

Use cookie cutters to cut out shapes from the dough and transfer them to the prepared baking sheets, leaving about 1 inch of space between each cookie.

Step 9

Bake the cookies in the preheated oven for 7-9 minutes, or until the edges are just lightly golden. Be careful not to overbake.

Step 10

Remove the cookies from the oven and let them cool on the baking sheets for 2-3 minutes before transferring them to a wire rack to cool completely.

Step 11

Once cooled, decorate as desired with icing, sprinkles, or enjoy them plain!
