Ingredients

  • 2.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1.5 teaspoons baking powder
  • 0.25 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 0.5 cup unsalted butter, melted
  • 3 large eggs
  • 1.5 teaspoons vanilla extract
  • 1 cup whole almonds, toasted and coarsely chopped
  • 1 cup optional: semi-sweet chocolate for dipping, melted

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon.

Step 3

In a separate bowl, whisk the eggs, melted unsalted butter, and vanilla extract until well combined.

Step 4

Pour the wet mixture into the dry ingredients and stir until a dough forms. Fold in the toasted and chopped almonds.

Step 5

Divide the dough in half and shape each portion into a log about 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, leaving space between them to expand.

Step 6

Bake the logs in the preheated oven for 25–30 minutes, or until they are firm to the touch and lightly golden.

Step 7

Remove the baking sheet from the oven and let the logs cool for 10 minutes. Reduce the oven temperature to 325°F (165°C).

Step 8

Using a sharp serrated knife, slice the logs diagonally into 1/2-inch-thick slices. Place the slices cut side down on the baking sheet.

Step 9

Bake the biscotti for 10 minutes, then flip each slice and bake for another 10 minutes, or until crisp and golden.

Step 10

Let the biscotti cool completely on a wire rack. If desired, dip one end of each biscotti into melted chocolate and allow to set on parchment paper.

Step 11

Store the biscotti in an airtight container at room temperature for up to two weeks. Enjoy with coffee, tea, or as a standalone treat!
