Ingredients

  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 1 ripe avocado
  • 0.5 small red onion
  • 1 cup mandarin oranges (peeled and segmented)
  • 0.5 cup feta cheese (crumbled)
  • 0.25 cup roasted sunflower seeds
  • 3 tablespoons extra virgin olive oil
  • 1.5 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash and thoroughly dry the mixed salad greens. Place them in a large salad bowl.

Step 2

Halve the cherry tomatoes and thinly slice the cucumber. Add them to the bowl with the salad greens.

Step 3

Carefully cut the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin wedges and add them to the bowl.

Step 4

Slice the red onion thinly and add to the salad, followed by the segmented mandarin oranges.

Step 5

Sprinkle the crumbled feta cheese and roasted sunflower seeds over the top of the salad.

Step 6
