Ingredients

  • 1.75 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 0.5 cups Brown sugar, packed
  • 1 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 0.25 teaspoons Ground ginger
  • 0.125 teaspoons Ground cloves
  • 1 cups Pumpkin puree (not pumpkin pie filling)
  • 0.5 cups Vegetable oil
  • 2 pieces Large eggs
  • 1 teaspoons Vanilla extract
  • 0.25 cups Milk
  • 0.5 cups Optional mix-ins: chopped nuts or chocolate chips

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners or lightly grease it with nonstick spray.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.

Step 3

In a separate medium mixing bowl, combine the pumpkin puree, vegetable oil, eggs, vanilla extract, and milk. Whisk until the mixture is smooth and well combined.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring gently with a spatula or wooden spoon until just combined. Do not overmix, as this will make the muffins dense.

Step 5

If using optional mix-ins like nuts or chocolate chips, gently fold them into the batter.

Step 6

Divide the batter evenly among the 12 muffin cups, filling each about 3/4 of the way full.

Step 7

Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
