Ingredients

  • 1 cup creamy peanut butter
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1.5 cups rolled oats
  • 0.5 cup mini chocolate chips
  • 0.25 teaspoon salt

Directions

Step 1

In a medium-sized mixing bowl, combine peanut butter, granulated sugar, brown sugar, and unsalted butter. Use a spatula or a wooden spoon to mix until the mixture is smooth and creamy.

Step 2

Stir in the vanilla extract and salt until fully incorporated.

Step 3

Fold in the rolled oats gradually, about half a cup at a time, until the mixture is sticky but holds together when pressed.

Step 4

Gently mix in the mini chocolate chips, being careful not to overmix as the chocolate chips can start to melt from the warmth of your hands or mixing tool.

Step 5

Line a baking sheet with parchment paper or wax paper.

Step 6

Using a tablespoon or small cookie scoop, portion out the mixture and roll into 1-inch balls. Place each ball on the prepared baking sheet, leaving a little space in between.

Step 7

Refrigerate the peanut butter balls for at least 30 minutes to firm up.

Step 8

Serve the Peanut Butter Quickies directly from the fridge or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 1 week.
