Bring a large pot of salted water to a boil. Carefully remove the core of the cabbage using a sharp knife and gently peel off 12 to 14 large leaves.
Blanch the cabbage leaves in the boiling water for 1 to 2 minutes, just until softened. Remove with tongs and set aside to cool on a clean kitchen towel.
Preheat your oven to 350°F (175°C). Grease a large baking dish with olive oil.
In a large mixing bowl, combine the ground beef, ground pork, cooked rice, diced onion, minced garlic, egg, paprika, salt, and black pepper. Mix thoroughly using your hands or a spoon.
Lay a cabbage leaf flat on a clean surface. Place approximately 2 to 3 tablespoons of the meat mixture in the center of the leaf. Fold the sides of the leaf over the filling and roll tightly, tucking in the edges as you go. Repeat with remaining leaves and filling.
In a medium bowl, whisk together the crushed tomatoes, tomato paste, chicken broth, sugar, dried parsley, and a pinch of salt and pepper.
Spread a thin layer of the tomato sauce mixture on the bottom of the prepared baking dish. Arrange the cabbage rolls seam-side down in the dish. Pour the remaining sauce evenly over the rolls.
Cover the dish tightly with aluminum foil and bake in the preheated oven for 75 to 90 minutes, or until the cabbage is tender and the filling is fully cooked.
Remove from the oven and let the cabbage rolls rest for 5 minutes before serving. Garnish with fresh parsley if desired.
