Ingredients

  • 1 pound ground beef
  • 12 ounces uncooked rotini pasta
  • 14.5 ounces diced tomatoes (canned, with juice)
  • 1 packet taco seasoning mix
  • 2 cups beef broth
  • 2 cups cheddar cheese (shredded)
  • 0.5 cup sour cream
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 cup green onions (optional, chopped)

Directions

Step 1

Heat a large skillet or a Dutch oven over medium heat. Add 1 tablespoon of olive oil and minced garlic, then sauté for 1 minute until fragrant.

Step 2

Add the ground beef to the skillet, using a spoon or spatula to break it apart. Cook for 6-8 minutes until browned. Drain any excess grease if needed.

Step 3

Stir in the packet of taco seasoning, mixing well to coat the beef thoroughly. Cook for another minute to allow the spices to bloom.

Step 4

Add the uncooked rotini pasta, diced tomatoes (with their juice), and beef broth to the skillet. Stir everything together.

Step 5

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to a simmer, cover the skillet with a lid, and cook for 12-15 minutes. Stir occasionally, ensuring the pasta doesn't stick to the bottom of the pan, until the pasta is tender and most of the liquid is absorbed.

Step 6

Turn off the heat and stir in the shredded cheddar cheese and sour cream until smooth and creamy. Adjust salt and black pepper to taste.

Step 7

Garnish with chopped green onions (if desired) and serve hot.
