  • 1 cup Mayonnaise
  • 0.5 cup Sour cream
  • 2 tablespoons Yellow mustard
  • 1 tablespoon White vinegar
  • 2 stalks Celery
  • 0.5 medium, diced Red onion
  • 3 large Hard-boiled eggs
  • 2 tablespoons, chopped Fresh dill
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon, for garnish Paprika

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

Peel and cut the Yukon Gold potatoes into bite-sized cubes.

Step 3

Add the potatoes to the boiling water and cook for 10-15 minutes, or until fork-tender. Avoid overcooking to prevent them from becoming mushy.

Step 4

Drain the potatoes and let them cool completely to room temperature.

Step 5

In a large mixing bowl, whisk together the mayonnaise, sour cream, yellow mustard, and white vinegar until smooth and well combined.

Step 6

Dice the celery stalks and red onion. Peel and chop the hard-boiled eggs.

Step 7

Add the cooled potatoes, celery, red onion, eggs, and fresh dill to the bowl with the dressing. Gently fold everything together using a spatula to avoid breaking the potatoes.

Step 8

Season with salt and black pepper to taste.

Step 9

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.

Step 10

Before serving, sprinkle the potato salad with paprika for a pop of color and added flavor.

Step 11

Serve chilled and enjoy!
