  • 0.25 teaspoons Ground nutmeg
  • 2 large Eggs
  • 0.5 cups Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1.5 cups (packed) Grated zucchini
  • 4 ounces Cream cheese (softened)
  • 2 tablespoons Powdered sugar
  • 1 tablespoons Milk (optional, as needed)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it lightly.

Step 2

In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until evenly combined.

In another bowl, whisk the eggs, vegetable oil, and vanilla extract until smooth. Gently stir in the grated zucchini.
