  • 1 pound Chicken breast (thinly sliced)
  • 1 cup White mushrooms (sliced)
  • 3 tablespoons Fish sauce
  • 3 tablespoons Lime juice
  • 1 tablespoon Brown sugar
  • 2 Thai red chili peppers (sliced)
  • 2 tablespoons Cilantro leaves (for garnish)
  • 2 Green onions (sliced, for garnish)

Directions

Step 1

In a large pot, combine the coconut milk and chicken broth. Heat over medium heat until it begins to simmer.

Step 2

Add the smashed lemongrass stalks, galangal, and kaffir lime leaves to the pot. Allow them to simmer for 5 minutes to infuse the broth with flavor.

Step 3

Add the thinly sliced chicken breast to the pot and cook for 5–8 minutes, or until the chicken is fully cooked.
