Ingredients

  • 1.5 cups Orzo pasta
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.25 cup Red onion
  • 0.5 cup Kalamata olives
  • 0.5 cup Feta cheese
  • 0.25 cup Fresh parsley
  • 3 tablespoons Lemon juice
  • 4 tablespoons Olive oil
  • 1 clove Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the orzo pasta according to the package instructions until al dente. Drain, rinse under cold water, and set aside to cool.

Step 2

Meanwhile, dice the cherry tomatoes in halves or quarters, peel and dice the cucumber, finely chop the red onion, and slice the Kalamata olives into halves.

Step 3

In a large mixing bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, and Kalamata olives.

Crumble the feta cheese and finely chop the fresh parsley. Add them to the bowl with the orzo mixture.
