Ingredients

  • 2 tablespoons olive oil
  • 6 pieces thick pork sausages
  • 1 large onion
  • 3 pieces garlic cloves
  • 2 medium carrots
  • 1 large red bell pepper
  • 200 grams button mushrooms
  • 400 grams canned chopped tomatoes
  • 300 milliliters vegetable stock
  • 400 grams canned cannellini beans
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat a large casserole dish or heavy-bottomed pot over medium heat and add the olive oil.

Step 2

Brown the sausages on all sides, about 5-7 minutes. Once browned, remove from the pot and set aside.

Step 3

In the same pot, add the diced onion and cook for 3-4 minutes until softened.

Step 4

Add the minced garlic and cook for an additional minute until fragrant.

Step 5

Stir in the chopped carrots, sliced red bell pepper, and button mushrooms. Cook for 5-7 minutes until the vegetables begin to soften.

Step 6

Pour in the canned chopped tomatoes, vegetable stock, and tomato paste. Stir to combine.

Step 7

Add the browned sausages back into the pot, followed by the canned cannellini beans (drained and rinsed).

Step 8

Season with paprika, dried thyme, dried rosemary, salt, and black pepper. Stir well.

Step 9

Bring the mixture to a gentle simmer, cover the pot with a lid, and cook on low heat for 45 minutes. Stir occasionally, ensuring nothing sticks to the bottom.

Step 10

Remove the lid and simmer for an additional 10 minutes to allow the sauce to thicken slightly.

Step 11

Taste and adjust seasoning if necessary.

Step 12

Garnish with freshly chopped parsley before serving.

Step 13

Serve hot with crusty bread, mashed potatoes, or steamed rice.
