Ingredients

  • 2.5 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Granulated sugar
  • 1 teaspoon Salt
  • 0.75 cup Unsalted butter (cold)
  • 1 cup Buttermilk (cold)
  • 2 tablespoons Unsalted butter (melted, for brushing)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt until well combined.

Step 3

Cut the cold unsalted butter into small cubes and add it to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs with pea-sized bits of butter.

Step 4

Make a well in the center of the mixture and pour in the cold buttermilk. Using a spoon or spatula, gently stir until the dough just comes together. Be careful not to overmix; the dough should be slightly sticky.

Step 5

Lightly flour a clean work surface and turn the dough out onto it. Knead the dough gently 3-4 times to bring it together, then pat it into a rectangle about 1 inch thick.

Step 6

Fold the dough into thirds (like folding a letter), then rotate it 90 degrees. Pat it out again into a 1-inch-thick rectangle. Repeat this process 2 more times. This creates flaky biscuit layers.

Step 7

Using a 2 or 2.5-inch round biscuit cutter, cut out the biscuits and place them on the prepared baking sheet. Gather the scraps, gently rework them, and cut out additional biscuits.

Step 8

Bake the biscuits in the preheated oven for 12-15 minutes, or until they are tall and golden brown on top.

Step 9

Remove the baking sheet from the oven and immediately brush the hot biscuits with the melted unsalted butter.

Step 10

Serve the biscuits warm with butter, honey, or jam. Enjoy!
