Ingredients

  • 1 lb ground beef (or substitute ground turkey, chicken, or plant-based meat)
  • 2 medium potatoes, diced
  • 3 medium carrots, peeled and sliced
  • 1 medium onion, chopped
  • 1 cup green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C). If cooking outdoors, prepare a medium-hot grill.

Step 2

Tear off four large sheets of aluminum foil, each about 12 inches long. Set them aside.

Step 3

In a large mixing bowl, combine the ground beef, diced potatoes, sliced carrots, chopped onion, and green beans.

Step 4

Drizzle olive oil over the mixture, then sprinkle in garlic powder, paprika, dried thyme, salt, and black pepper. Toss everything together until well coated.

Step 5

Divide the mixture evenly between the four sheets of foil. Make sure to leave some space for air circulation inside the packets.

Step 6

Fold the sides of each foil sheet inward, then roll the edges tightly to seal each packet securely.

Step 7

Place the foil packets on a baking sheet and transfer them to the oven for 30-35 minutes or until the meat is fully cooked and the vegetables are tender. If using a grill, cook over medium heat for the same amount of time, turning occasionally.

Step 8

Carefully open the foil packets (watch out for steam!) and sprinkle with shredded cheddar cheese, if desired. Serve warm.
