  • 12 pieces large clams (quahogs or cherrystone)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1.5 cups panko breadcrumbs
  • 2 tablespoons fresh parsley, finely chopped
  • 0.5 cup Parmesan cheese, grated
  • 1 tablespoon lemon juice
  • 0.25 teaspoons crushed red pepper flakes
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons black pepper
  • 0.5 teaspoons paprika (for garnish)
  • 4 pieces lemon wedges (for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Scrub the clams under cold water to remove any dirt or debris. Discard any clams that are open and do not close when tapped.

Step 3

In a large pot, bring about 1 inch of water to a boil. Add the clams, cover, and steam for 5-7 minutes or until the shells open. Remove from heat and allow them to cool slightly. Discard any clams that remain closed.

Carefully remove the clam meat from the shells, chop it finely, and reserve. Clean the shells and set them aside for stuffing.
