  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 14.5 ounces diced tomatoes, with juice
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Add the stew beef in batches to avoid overcrowding the pot. Sear the beef on all sides until browned, about 4-5 minutes per batch. Remove the beef and set aside.

In the same pot, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
