Ingredients

  • 4 cups Watermelon cubes (seedless)
  • 1 cup Pineapple chunks (fresh or canned)
  • 0.5 cup Cucumber (sliced)
  • 3 tablespoons Lemon juice (freshly squeezed)
  • 1 tablespoon Honey (optional)
  • 10 leaves Fresh mint leaves
  • 2 cups Cold water
  • 1 cup Ice cubes
  • 4 slices Lemon slices (for garnish, optional)
  • 4 sprigs Mint sprigs (for garnish, optional)

Directions

Step 1

In a blender, combine the watermelon cubes, pineapple chunks, cucumber slices, and fresh lemon juice.

Step 2

Blend on high speed until smooth and well combined.

Step 3

Taste the mixture and, if desired, add honey to sweeten. Blend again to incorporate.

Step 4

Strain the blended mixture through a fine mesh sieve into a large pitcher to remove any pulp (optional for a smoother drink).

Step 5

Add the fresh mint leaves to the pitcher and lightly muddle them using the back of a spoon to release their flavor.

Step 6

Stir in the cold water and mix well to dilute the mixture slightly.
