Ingredients

  • 3 pounds Chuck roast
  • 1 teaspoons Salt
  • 1 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, sliced
  • 4 Carrots, peeled and cut into chunks
  • 2 Celery stalks, cut into chunks
  • 6 small Gold potatoes, halved
  • 3 Garlic cloves, minced
  • 2 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 4 sprigs Thyme, fresh
  • 2 sprigs Rosemary, fresh
  • 2 Bay leaves

Directions

Step 1

Season the chuck roast generously with salt and black pepper on all sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 4 minutes per side. Remove the roast and set aside.

Step 3

In the same skillet, add the sliced onion and cook until softened, about 3 minutes. Stir occasionally to prevent burning.
