Ingredients

  • 12 ounces egg noodles
  • 1 pound ground beef (or beef strips)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 1 tablespoon olive oil or butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the egg noodles according to the package instructions, then drain and set aside.

Step 2

In a large skillet, heat the olive oil or butter over medium heat. Add the diced onion and cook for 2-3 minutes until softened.

Step 3

Add the garlic and cook for another 30 seconds until fragrant.

Step 4

Add the ground beef (or beef strips) to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.

Step 5

Add the sliced mushrooms to the skillet and cook for 3-5 minutes until softened.

Step 6

Sprinkle the flour over the beef and mushroom mixture. Stir well to coat, cooking for 1 minute to remove the raw flour taste.

Step 7

Pour in the beef broth and stir to combine, scraping up any browned bits from the bottom of the skillet.

Step 8

Stir in the Dijon mustard and paprika. Let the sauce simmer for 3-5 minutes, allowing it to thicken.

Step 9

Lower the heat to low and stir in the sour cream. Mix until well combined and creamy. Do not boil after adding the sour cream, as it may curdle.

Step 10

Season the stroganoff with salt and black pepper to taste.

Step 11

Add the drained egg noodles to the skillet and gently toss to coat them in the sauce.

Step 12

Serve immediately, garnished with chopped parsley if desired.
