Ingredients

  • 1 pound ground beef or ground lamb
  • 1 medium, diced onion
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cloves, minced garlic
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 large, peeled and cubed russet potatoes
  • 3 tablespoons butter
  • 0.5 cup milk
  • 0.5 cup shredded cheddar cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large pot, place the peeled and cubed potatoes and cover them with water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes, or until the potatoes are tender.

Step 3

While the potatoes are boiling, heat a large skillet over medium heat. Add the ground beef or lamb and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.

Step 4

Add the diced onion and minced garlic to the skillet with the meat. Cook for 3-4 minutes, or until the onion becomes translucent.

Stir in the tomato paste, beef broth, Worcestershire sauce, dried thyme, dried parsley, salt, and black pepper. Let the mixture simmer for 5 minutes to thicken.

Add the frozen mixed vegetables to the meat mixture and stir well. Let cook for another 2-3 minutes, then remove from heat.

When the potatoes are done, drain them and return them to the pot. Add the butter, milk, and a pinch of salt, then mash the potatoes until smooth.

Spread the meat mixture evenly in the bottom of a 9x9-inch baking dish. Spoon or pipe the mashed potatoes on top, covering the meat completely.
