Ingredients

  • 250 grams all-purpose flour
  • 50 grams granulated sugar
  • 10 grams baking powder
  • 1 pinch salt
  • 85 grams unsalted butter (cold, diced)
  • 150 milliliters milk
  • 1 teaspoon vanilla extract
  • 1 unit egg (lightly beaten, for glazing)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

In a large bowl, combine the flour, sugar, baking powder, and salt. Mix well to distribute the dry ingredients evenly.

Step 3

Add the cold, diced butter to the dry ingredients. Use your fingertips to rub the butter into the flour mixture until it resembles coarse breadcrumbs. Work quickly to keep the butter from melting.

Step 4

In a separate small bowl or jug, mix the milk and vanilla extract together.

Step 5

Make a well in the center of the dry mixture and pour in the milk mixture. Stir gently with a fork or spatula until the dough just comes together. Be careful not to overmix; the dough should be soft and slightly sticky.

Step 6

Turn the dough out onto a lightly floured surface. Pat it gently into a 2.5 cm (1 inch) thick round. Avoid kneading the dough, as this will make the scones tough.

Step 7

Use a 5 cm (2 inch) round cutter to cut out scones, pressing straight down without twisting the cutter. Gather the scraps and gently press them together to cut out more scones.

Step 8

Place the scones on the prepared baking tray, leaving a little space between each one. Brush the tops lightly with the beaten egg for a shiny, golden finish.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the scones are well-risen and golden brown.

Step 10

Remove from the oven and cool slightly on a wire rack. Serve warm with butter, clotted cream, or your favorite jam.
