  • 2 large Eggs
  • 1 cup Frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 2 stalks Green onions, chopped
  • 2 cloves Garlic, minced
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Prepare all ingredients before starting: chop the green onions and mince the garlic. If using fresh cooked rice, let it cool and dry out a bit before cooking.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 3

Crack the eggs directly into the skillet and scramble them quickly, breaking them into small pieces as they cook. Once done, remove the eggs from the skillet and set aside.
