Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 28 ounces canned whole peeled tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 cup heavy cream (optional, for serving)
  • 4 leaves fresh basil leaves (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and cook for 5-7 minutes, stirring occasionally, until softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Pour in the canned tomatoes (including their juice) and use a spoon to gently break them up into smaller pieces.

Step 5

Add the vegetable broth, sugar, salt, and black pepper. Stir to combine.

Step 6

Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for 15 minutes to allow the flavors to meld.

Step 7

Remove the pot from heat and use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a countertop blender and blend to your desired consistency.

Step 8

Taste the soup and adjust seasoning with more salt or pepper, if needed.

Step 9

Ladle the soup into bowls and, if desired, drizzle with a splash of heavy cream and garnish with fresh basil leaves before serving.
