Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 8 flour tortillas
  • 2 tablespoons cilantro, chopped (optional)
  • 0.5 cup sour cream (optional)
  • 0.5 cup guacamole (optional)

Directions

Step 1

In a large bowl, combine the olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and black pepper to create a marinade.

Step 2

Add the peeled and deveined shrimp to the marinade, tossing to coat evenly. Let the shrimp marinate for at least 10 minutes while you prepare the vegetables.

Step 3

Heat a large skillet or cast-iron pan over medium-high heat. Add a drizzle of olive oil if needed and toss in the sliced red bell pepper, green bell pepper, and onion. Cook for about 5–7 minutes until the vegetables are tender and slightly charred. Remove the vegetables and set aside.

Step 4

In the same skillet, add the marinated shrimp in a single layer. Cook for 2–3 minutes on each side until the shrimp are pink and cooked through.

Step 5

Return the cooked vegetables to the skillet and toss everything together to mix the flavors.

Step 6

Warm the flour tortillas in a clean skillet or microwave.

Step 7

Assemble the shrimp fajitas by placing some of the shrimp and vegetable mixture onto a warm tortilla. Top with your choice of chopped cilantro, sour cream, guacamole, or other desired toppings.

Step 8

Serve immediately, pairing with lime wedges for an extra burst of citrus if desired.
