  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil

  • 1 teaspoon paprika
  • 0.5 teaspoons cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 medium, diced red bell pepper
  • 1 medium, diced zucchini
  • 1 cup cherry tomatoes
  • 2 cloves, minced garlic
  • 1.5 cups chicken stock
  • 1 cup couscous
  • 0.25 cup raisins
  • 0.25 cup slivered almonds
  • 2 tablespoons, chopped parsley
  • 1 medium lemon

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and season with ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper.

Step 2

In a large skillet or sauté pan, heat 1 tablespoon of olive oil over medium heat. Add the chicken pieces and cook for 5-7 minutes, until golden and cooked through. Set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Toss in the diced red bell pepper, zucchini, cherry tomatoes, and minced garlic. Sauté for 3-4 minutes until the vegetables are slightly softened.
