Ingredients

  • 4 large Eggs
  • 1 cup Whole milk
  • 1 cup All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Powdered sugar
  • 4 pieces Lemon wedges

Directions

Step 1

Preheat your oven to 425°F (218°C). Place a 10-inch oven-safe skillet (preferably cast iron) in the oven while it preheats.

Step 2

In a blender, combine the eggs, milk, flour, granulated sugar, vanilla extract, and salt. Blend on high speed for about 30 seconds, or until the batter is smooth and frothy. Alternatively, whisk by hand until no lumps remain.

Step 3

Carefully remove the hot skillet from the oven using oven mitts. Add the butter to the skillet and swirl it around until fully melted and the pan is coated.

Step 4

Immediately pour the prepared batter into the hot skillet. Do this quickly so the butter stays sizzling.
