Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 teaspoon Salt
  • 2 Celery stalks, diced

  • 0.33 cup Pickles, diced
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 cup Mayonnaise
  • 0.25 cup Sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Ground black pepper
  • 3 Hard-boiled eggs, chopped

Directions

Step 1

Wash the Yukon Gold potatoes, then peel if desired. Cut the potatoes into bite-sized chunks.

Place the potato chunks in a large pot and cover with water. Add 1 teaspoon of salt to the water. Bring to a boil over medium-high heat and cook for 15-20 minutes, or until the potatoes are fork-tender.
