Peel the Yukon Gold potatoes and cut them into even chunks, approximately 1.5 inches in size. This ensures even cooking.
Fill a large pot with 8 cups of water and add 1 teaspoon of salt. Bring the water to a boil over high heat. Once boiling, add the potato chunks.
Cook the potatoes for about 15-20 minutes, or until they can be easily pierced with a fork. Drain thoroughly in a colander.
