Ingredients

  • 2.5 pounds Yukon Gold potatoes
  • 6 tablespoons Unsalted butter
  • 0.5 cup Heavy cream
  • 0.5 cup Sour cream
  • 4 large Garlic cloves
  • 3 tablespoons Fresh chives
  • 1 teaspoon Fresh thyme leaves
  • 2 teaspoons Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 8 cups Water

Directions

Step 1

Peel the Yukon Gold potatoes and cut them into even chunks, approximately 1.5 inches in size. This ensures even cooking.

Step 2

Fill a large pot with 8 cups of water and add 1 teaspoon of salt. Bring the water to a boil over high heat. Once boiling, add the potato chunks.

Step 3

Cook the potatoes for about 15-20 minutes, or until they can be easily pierced with a fork. Drain thoroughly in a colander.

While the potatoes are cooking, peel the garlic cloves. Mince 2 cloves finely and set them aside. Smash the remaining 2 cloves with the flat side of a knife for later use.
